A reason to Celebrate and Birth cake!
I can think of no better reason to celebrate than when a new life comes into this world. Especially when this child is born to a family that has been anticipating her arrival with great joy! Our housemates have been waiting anxiously for their daughter to be born for this last week. Since we’re all under the same roof, we’ve been sharing in their anticipation. Vivian was 9 days overdue… poor girl! However the action started this morning… really early… too early for me to stay up for…so at 8am I got back up to hear her struggling valiantly from downstairs. She had a homebirth, which is what we’re also planning on doing. What a cool experience! It was so great to join as a community as the midwife and her assistants came early in the morning as well as a friend of Vivian’s, Misty. Misty helped with our housemates son (whom was sick with the flu all day! Poor buddy!) as well as help me cook hoards of food in the kitchen. My husband came home early to help with Caleb and running errands… men truly appreciate having a ‘job’ to do during these moments
Vivian was 8 cm dilated most of the day, the baby just needed to get into the right position which she finally did at 3:15 and little Verity entered the world at 3:45! It was a wonderful event to behold and be part of! Since I chewed off my nails by 9AM I kept my self busy in my usual way, clean and cook for everyone until they’re stuffed. We had Kefir shakes and veggie scrambles, zucchini bread and fruit salad, rosemary apple roasted chicken with truffled mashed potatoes and to top it all off, Birth cake. And not your typical ‘birthday’ cake, but birth cake! It’s packed with all sorts of wonderful ingredients that help replenish the energy used to push life into the world outta your ‘HooHa’.
So here’s the revised version that I got from my good friend Jenny. I can’t wait to enjoy this again over coffee tomorrow morning… hmmm… why wait, I’ll have some more NOW. It truly is important to use the best quality ingredients you can so that the new mommy is filled with plenty of healthy nutrients!
Organic Birth Cake

2 organic eggs
1/2 cup raw honey
2 cups whole wheat flour (or a combination of spelt and other flours)
1/2 tsp Sea Salt
1/2 tsp baking soda
2 cups organic crushed pineapple
1 cup dates (I chopped and soaked them in boiling water to make them more moist)
1/2 cup organic unsweetened coconut flakes
3/4 cups chopped pecans
1/4 cup hormone free or organic dry milk powder
1/4 cup Wheat Germ
Mix eggs and honey together. Add remaining ingredients and mix well. Pour into WELL greased bunt or cake pan. I use coconut oil which works Marvelously! Cook at 350 for 40 min or 25 if you split it into 2 pans.
Frosting (my favorite part)
This is the part I revised.
8 oz organic cream cheese
3 Tbs good butter or coconut oil
1 tsp vanilla
1 tsp almond extract
1/4 cup honey
(Original recipe called for 1 ripe banana smashed in… I tried it and didn’t like it, it also omitted almond extract)
Whip frosting together and smother the top of the cake with it!
Next time you wonder what to bring a new mom (and dad) bring this with some flowers and make their day! Make sure you make one and leave it at home for yourself too though….. ;) Fortunately our housemates don’t mind sharing! So happy birthday Little Verity Rene!
